I’ll admit I’m not really a fan of soups, but I had a kilo of carrots in the fridge on the turn. Rather than seeing them go to waste I thought I’d throw them in a pan with a few other ingredients and see what happens. It turned out great! I split it into 4 portions, thinking I’d have it over the next few days but ended up having it all over 2 days, it was that good! This is great for getting in one of your 5 a day!
Sauté onion until translucent and add the curry powder along with the carrots. Mix until the carrots are well covered.
Make up the vegetable stock, pour in and simmer for around 20 minutes or until carrots are cooked through and soft.
Transfer contents to a blender or use a hand blender and blend until you reach the desired consistency.
