I’ve finally cracked it! I tried making a “healthy” pizza using a wrap on several occasions before this only to be met with a sloppy mess that forced me to pretty much turn it into a pizza wrap (not necessarily a bad thing). However, it didn’t satisfy my craving for a real pizza. It’s something about the crunch of a crust along with the soft toppings that makes it so good and I finally worked out how and it was so simple. Cook the wrap first!
It seemed so simple yet for some reason before, I thought it would cook perfectly with all the ingredients on top. So what I tend to do know is put the wrap in the oven as it’s preheating for about 10 minutes and prepare the rest of the ingredients. This allows the wrap to cook without being overwhelmed by heat and burning. After the ingredients are prepared I pull out the oven what is essentially a gigantic crisp!
Layer on the ingredients, pop back in the oven and a little while later you’ll have an awesome High Protein Thin Crust Pizza with a crunchy base and perfectly cooked toppings.
High-Protein Thin Crust Pizza
- 1 Square Wholemeal Wrap
- 80 g chicken breast, cooked
- 50 g frozen mixed peppers, thawed
- 1/2 onion, diced
- 1 tomato, sliced
- 50 g passata
- 1 clove garlic, minced
- 1 tsp dried Italian-style herbs
- 30 g reduced fat cheese
- salt & pepper, to taste
Preheat the oven to 180C and place the wrap in the oven for around 10 minutes.
Mix the passata in a bowl along with the salt, pepper, garlic and mixed herbs.
Chop the onions and peppers, grate the cheese and shred the chicken in readiness.
Remove the base from the oven and begin by topping with the tomato mix. Add the vegetables then chicken and finally the cheese on top.
Sprinkle over some paprika for an added kick and even a few rounds of black pepper if you like.
Place back in the preheated oven for around 10 minutes or until the cheese is fully melted.
I used Warburtons Brown Square Wraps as they are slightly thicker than normal wraps. Be aware that if you choose a different wrap the nutritional info will change.
