When assessing clients nutrition plans I regularly find they aren’t consuming enough fish for my liking. Unless you are allergic (or don’t like the taste) then I highly recommend consuming a variety of fish on a regular basis. Fish has a ton of benefits that other meats don’t have, particularly their fatty acid profiles.
With this Paella you get a variety of fish in one hit but the possibilities are endless, you could substitute most fish depending on preference and goals. This is definitely a dish that tastes as good, if not better the second time round!
- 390g Fish Pie Mix
- 75g Spanish Chorizo
- 100g Prawns
- 200g Frozen Peas
- 200g Basmati Rice
- 1 Onion, diced
- 2 Garlic Cloves, diced
- 750ml Chicken/Fish Stock
- 1 tsp Paprika
- 1 tsp Turmeric
- Salt and Pepper to taste
- In a non stick pan, fry the chorizo and onion on a medium heat until the chorizo releases its oils. Stir in the turmeric and rice to coat.
- Pour in the stock and bring to the boil then simmer for 15 minutes, stirring occasionally to avoid sticking.
- Pour in the peas and cook for 5 minutes then pour in the fish pie mix to heat through and season to taste.
